We have been very busy the past few weeks. Nothing out of the ordinary...literacy bag orders, three kids, a messy house, dance, church etc. but I find feeding a 2 month old every three hours to consume a lot of my time! It amazes me how quickly I forgot that feeding Carter alone would seem like a full time job. Not to mention, diapering him, playing with him, grooming him etc. He is a full-time job by himself. I have also been trying to perfect my hand at sewing and I've been creating lots of fun bibs and burp cloths that I hope to have up on the site soon. It doesn't help that Joe leaves at 5:30 a.m. each morning for work, so I have no help with Carter at night or getting everyone up and out the door for school by 7:30 each morning. (Joe is a wonderful help in the evenings but it would be cruel to ask him to get up at 4:00 am with Carter each morning when his alarm already goes off at 4:30.) We are not morning people, so that is an adjustment for us him. Carter has been doing great most nights. he usually sleeps until 6 but off and on throughout the week, maybe 2-3 nights a week I hear him around 4. Sometimes he puts himself back to sleep, other times I have to go in and soothe him and sometimes I have to actually feed him to get him to fall asleep again. While I know from 9 until 4 is 7 hours and that is great, I really love the 9 until 6 days! He is such a great baby!
Here is the granola recipe I mentioned a few posts ago. It is yummy. It makes a ton, so either cut the recipe in half or share it with a friend. I will post pictures soon. My camera accidentally got left in Jackie's car while she was here visiting, so it got taken back to PA! When I get it back I will post some more of our Easter pictures. Aunt Carol's GranolaCombine 3/ 4 cup oil (I used Smart Balance)1 cup honey1-2 tsp. vanilla and set the liquid ingredients aside.Combine:12 cups oatmeal1 cup sunflower seeds1 1/2 cup wheat germ1/2 cup sesame seeds1/2 cup chopped unsalted nuts (almonds, cashews, pecans) I think I added more than 1/2 cup1 cup coconutraisins and cranberries (I just dumped some in)Optional: dried pineapple, apricots, banana chips (I used pineapple)Mix 3 cups oat mixture into the oil mixture at a time until all has been coated evenly. Divide among 3-4 cookie sheets and bake at 350 for 10-15 minutes. ( I drizzled a little bit more honey directly onto the granola once it was on the cookie sheet. Not much, maybe 1-2 tablespoons around the top of the granola. It wasn't all coated, but it gave some bites a little extra sweetness.) Stir halfway through baking time to ensure even browning. Cool on kitchen dry towels. Enjoy!
